Koichi Shuraku
Owner and Chef

Koichi Shuraku graduated from culinary school in Osaka, Japan. He is a professional chef specializing in Japanese cuisine with over 40 years of experience with fine cuisine.


He opened Maido Catering Service in the year 2000 at Alvarado Street market in Downtown Monterey. Koichi's booth has been participating in farmer's markets and many annual events like Monterey Jazz Festival, Japanese Cultural Fair, Carmel Valley Fiesta, Good Old Days, Sea Otter Classic, and much more.

Koichi also makes sushi and other foods at private parties.

OUR POLICY

To ensure our customer's health and comfort, we avoid MSG contained foods and make sure the ingredients do not contain artificial coloring and preservatives as much as possible. For example, our Gari (pickled ginger) has natural color, not dyed pink.


We believe preparing sushi rice is important as well as the freshness of each ingredients. We start from selecting and blending different kinds of rice and then it is prepared and seasoned in our original method based on the Japanese traditional way. That is why our sushi rice is fresh and moist. 


As a father of three, the chef Koichi created some menu for little mouths too. We love to see them smile. Also you can always ask for a custom order to fit your edible needs. We provide many delicious options including vegan, gluten-free, and more!
